1 pound dry great Northern beans
Water
2 boxes chicken broth 6-8 cups
1 cup chopped carrots
1/2 stalk celery, chopped
1 cup chopped onion
1 teaspoon minced garlic
1 teaspoon mustard powder
2 bay leaves
2 cups chopped ham
1/2 teaspoon ground white pepper
** add a cup of green beans(optional)
Directions
Rinse the beans, sorting out any broken or discolored ones. In a crock pot soak the beans over night just covered with cold water. In the morning drain the beans and return them to the crock pot.
In a skillet with a tablespoon of butter sauté ham, onion, garlic, celery and carrots. Add spices, the bay leaves mustard and pepper and then the stock and put pot on low and cook all day 6 - 8 hours. Hold off on adding any salt until you taste because ham can be salty.
**This is a quick method, nothing is stopping you from making your own broth the day before by boiling ham hocks and making the soup using that instead of the boxed broth.**
