PEANUT BUTTER CUP SPRINKLED BROWNIES












Ingredients

    2 boxes Betty Crocker* Chocolate Chunk Brownie Mix

    2/3 cup (150 mL) vegetable oil

    ½ cup (125 mL) water

    2 eggs

    1 1/3 cups (325 mL) REESE® Minis PEANUT BUTTER CUPS® Candy, divided (210 g pkg)

    ½ cup (125 mL) smooth peanut butter

Instructions


    1 Heat oven to 350°F (180°C). Grease or spray with non-stick cooking spray bottom only of 9x13-inch (23x33 cm) baking pan.
    2 In medium bowl, combine brownie mixes, oil, water and eggs just until everything is well blended. Stir in 2/3 cup (150 mL) mini peanut butter cups. Spread mixture in prepared pan.
    3 Drop peanut butter by tablespoons onto brownie batter. Swirl with metal spatula or knife for marbled effect.
    4 Bake 27 to 29 minutes or until toothpick inserted 2 inches (5 cm) from side of pan comes out almost clean. Cool 45 minutes and sprinkle remaining 2/3 cup (150 mL) mini peanut butter cups over surface, pressing in slightly. Cool completely in pan on wire rack. Cut into squares or triangles.

Granny’s Doughnuts











Ingredients
1 cup sugar
1 tsp nutmeg
1 tsp baking soda
1/2 tsp salt
2 eggs
1 tablesppoon shortening
1 cup sour milk
6 cups flour

Preparation




Mix sugar, nutmeg, soda, salt, eggs, milk and shortening. Add enough flour to roll out dough on a floured surface and cut with doughnut cutter. Heat shortening to 375 degrees F. and drop doughnuts in, turning several times. Drain on soft crumpled paper. Cool and dust with powdered sugar, or granulated sugar and or with cinnamon, or drizzle with glaze (see below) if desired. Repeat with doughnut centers.

Note: milk can be soured by adding 1 Tbsp vinegar to 1 cup fresh milk.

White Doughnut Glaze

2 cups powdered sugar

1 tsp vanilla extract

4 to 6 Tbsp milk

Mix powdered sugar, vanilla and milk with a fork t
o desired consistency. Thicken with powdered sugar or thin down with milk.



FRIENDSHIP CASSEROLE








FRIENDSHIP CASSEROLE

2 pounds ground beef, browned
1 jar 48 oz of your favorite spaghetti sauce
16 oz bag medium egg noodles
½ cup butter
½ teaspoon onion powder
½ teaspoon garlic powder
½ cup grated parmesan cheese
12 oz shredded mozzarella cheese



Preheat oven to 350º
In a skillet, brown meat and drain fat. Then put the meat back in the skillet.  Add spaghetti sauce to meat; simmer for 20 minutes.

Cook noodles as directed on the package (cook to al dente); then drain and
toss the noodles with butter, seasonings and parmesan cheese.  Spray two
9×13 pans with non-stick spray ( I prefer to use my Misto sprayer that I fill with oil).

In each pan layer one quarter of the sauce, half of the noodles, then split the remaining sauce between the two. Top each with half of the mozzarella cheese. Cover with foil; bake 45 minutes.

*You can also add some sauteed green bell peppers, onions and
mushrooms to the sauce.  I added mushrooms after checking with my friend to make sure she liked them, too.

Sweet Chicken Bacon Wraps










Ingredients


    1 1⁄2 lbs boneless skinless chicken breasts
    1 (1 lb) packagesliced bacon
    3⁄4 cup firmly packed brown sugar
    2 tablespoons chili powder

Directions

    Preheat oven to 350°F.
    Cut chicken breasts into 1-inch cubes.
    Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick inserted on the diagonal starting where bacon seam overlaps.
    Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture.
    Coat a rack and broiler pan with non-stick cooking spray. Place chicken on rack in broiler pan.
    Bake at 350°F for 30 to 35 minutes, or until bacon is crisp.

Made-Over Lasagna










Ingredients


    1 lb Italian sausage (ground)
    15 ounces ricotta cheese
    1⁄4 cup parmesan cheese
    4 cups mozzarella cheese (shredded)
    2 eggs (beaten)
    3 teaspoons garlic powder
    1 teaspoon oregano
    1 (16 ounce) box elbow macaroni
    1 1⁄2 cups fresh mushrooms (sliced)
    2 (26 ounce) jars spaghetti sauce (I use Ragu meat)

Directions



    In small bowl whisk together your beaten egg, ricotta, 2 cups mozzarella, parmesan cheese and 2 tsp garlic powder.
    Meanwhile cook macaroni according to package for 8-11mins.
    Brown sausage and drain; add 1 jar spaghetti sauce.
    In 13x9-inch baking dish layer noodles, ricotta mixture, meat sauce, mushrooms.
    Repeat layers.
    Heat other jar of sauce adding oregano, and 1tsp garlic powder, and pour over top of dish -- careful not to overfill, but fully saturate.
    Cover with foil and cook 40 minutes. Remove foil and top with 1.5-2 cups mozzarella and continue to cook for 5-7 minutes or until cheese is melted and bubbling.
    **Serve with garlic bread and watch it disappear!**.

Almost Heaven










Ingredients


    1 (18 1/4 ounce) package yellow cake mix
    1 (20 ounce) can crushed pineapple
    1 (1 ounce) package sugar-free instant vanilla pudding mix or 1 small regular instant vanilla pudding
    1 (8 ounce) package cream cheese, softened
    2 cups cold milk
    1 (8 ounce) carton frozen whipped topping
    1 cup finely chopped pecans

Directions


    Mix the cake according to the package directions. Bake cake in a 9 X 13 inch pan. While hot poke with skewer or chopstick and pour pineapple with the juice over the cake.
    Mix the pudding, milk and cream cheese, beatnig until smooth. Spread over pineapple layer. Spread whipped topping over top. Sprinkle with the nuts.
    Refrigerate.

Blueberry Cheesecake Cookies









Ingredients

    boxes Jiffy Blueberry Muffin mix

    4

    oz. cream cheese

    1

    stick “I Can’t Believe It’s Not Butter”

    ½

    C. light brown sugar, firmly packed

    2

    eggs

    1½

    C. white chocolate chips

Directions


Preheat oven to 325 degrees.

Cream together butter, cream cheese, and brown sugar. Add eggs one at a time until blended. Combine muffin mix with the butter mixture and mix well.

Fold in white chocolate chips. Chill for at least one hour.

Drop by tablespoonfuls onto greased cookie sheet, 2 inches apart.

Bake for 14-15 minutes or until just turning brown around the edges.

Cool on cookie sheet for 1-2 minutes. Transfer to wire rack until completely cooled.
